Combine the ground cooked ham, cooked rice, prepared horseradish, finely chopped onion, and finely chopped celery in a large mixing bowl.

Stir in the slightly beaten egg and sour cream until the mixture is evenly combined.

Divide the ham and rice mixture evenly among 4 serving portions or place in a baking dish if preparing as a single casserole.

Arrange the pineapple slices on top of or around the ham and rice dressing portions.
