Garlic Rice with Pine Nuts

Heat the melted butter in a large skillet over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, stirring occasionally to prevent browning.

Add the pine nuts to the skillet and toast for 2-3 minutes, stirring frequently, until lightly golden and fragrant.

Stir in the green pepper strips and red pepper strips, cooking for 2 minutes until slightly softened but still maintaining some crunch.

Add the cooked rice to the skillet, breaking up any clumps with a spoon. Stir constantly for 2-3 minutes until the rice is heated through and well combined with the butter and vegetables.

Remove the skillet from heat and fold in the chopped fresh parsley, mixing gently until distributed throughout the rice.
