Orange Raisin Rice

In a medium saucepan over medium heat, melt the butter or margarine. Add the celery and sauté for 2-3 minutes until softened.

Pour in the orange juice and water, then stir in the honey, salt, and orange peel. Bring the mixture to a gentle boil.

Add the raisins and uncooked rice to the boiling liquid, stirring once to combine all ingredients evenly.

Reduce the heat to low, cover the saucepan tightly with a lid, and allow the rice to simmer undisturbed until all the liquid is absorbed.

Remove the saucepan from heat and let the rice rest, still covered, to allow the steam to finish cooking the grains.

Fluff the rice gently with a fork, folding the raisins and celery throughout. Taste and adjust seasoning with additional salt or honey if desired.
