Heat the olive oil in a large skillet or heavy-bottomed pot over medium heat.

Add the chopped onion and sauté until softened and lightly golden, stirring occasionally, about 4-5 minutes.

Stir in the uncooked rice and toast it in the oil for 2-3 minutes, stirring constantly to coat all grains.

Pour in the canned tomatoes (with their juice) and water, then add the dried oregano, salt, and pepper.

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes until the rice begins to soften and the liquid is mostly absorbed.

Arrange the shrimp evenly over the rice and stir gently to distribute them throughout.

Cover the pot and cook for an additional 5-7 minutes until the shrimp turn pink and are cooked through.
