In a large mixing bowl, combine cornmeal, flour, baking powder, and salt, whisking together until evenly distributed.

Rub the butter or lard into the dry ingredients using your fingertips until the mixture resembles coarse breadcrumbs.

Gradually add lukewarm water, a little at a time, mixing until a soft, pliable dough forms that is not sticky.

Knead the dough gently on a lightly floured surface for 2 to 3 minutes, then allow it to rest covered with a clean cloth.

Divide the dough into equal portions and roll or flatten each piece into a round disc approximately 1/2 inch thick.

Heat a generous amount of oil in a deep frying pan or skillet over medium heat until shimmering but not smoking.
