Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering.

Add the chopped onion and stir-fry until softened and translucent, about 2-3 minutes.

Add the drained and flaked chicken to the skillet and stir-fry for 1-2 minutes to heat through.

Stir in the drained mushrooms and drained green peas, mixing well to combine with the chicken and onion.

Add the cooked rice to the skillet and break up any clumps with the back of a spoon or spatula, stirring continuously for 2-3 minutes until everything is evenly mixed and heated through.

If using pimientos, stir them in along with the ground black pepper and toss to distribute evenly throughout the stir-fry.

Cook for an additional 1-2 minutes, stirring constantly, until the mixture is hot and the flavors are combined.
