Ingredients

  • fresh pasta shells
    or 6 oz dry pasta shells
    8 oz
  • lbs fresh spinach
    1 1/4 unit
  • lbs Chicken breast grilled and cut into 1" cubes
    1 unit
  • med cloves garlic
    chop fine
    4 unit
  • olive oil
    or vegetable spray
    1 tsp
  • 1 cup
  • nutmeg or mace
    1/2 tsp
  • 1 unit
  • parmesan
    grated
    1/2 cup

Method

Bring a large pot of salted water to a boil and cook the pasta shells according to package directions until al dente, then drain and set aside.

Heat the olive oil in a large skillet over medium heat and add the chopped garlic, stirring frequently for about 1 minute until fragrant.

Add the fresh spinach to the skillet in batches, stirring until all leaves are wilted and any excess moisture has evaporated, approximately 3-4 minutes.

Pour in the chicken broth and bring to a simmer, then add the grilled chicken cubes and stir to combine.

Season the mixture with nutmeg or mace, salt, and pepper to taste.

Add the cooked pasta shells to the skillet and toss gently to coat all ingredients evenly with the broth and spinach mixture.

Remove from heat and stir in the grated Parmesan cheese until well distributed, then serve immediately.
