Preheat the toaster oven to 375°F (190°C) and lightly grease four individual loaf pans or a muffin tin with cooking spray.

Combine the ground chicken breast, beaten eggs, finely chopped onions, fresh breadcrumbs, grated Parmesan or romano cheese, fresh parsley, salt, and pepper in a large mixing bowl.

Mix the ingredients gently with your hands or a fork until just combined, taking care not to overmix, which can result in dense loaves.

Divide the mixture evenly among the prepared loaf pans or muffin cups, pressing gently to fill and shape each portion.

Place the loaf pans in the preheated toaster oven and bake for 25 to 30 minutes, until the loaves are cooked through and a meat thermometer inserted into the center reads 165°F (74°C).
