Zest the lime and set aside, then cut the lime in half and juice it into a small bowl.

Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.

Heat a large skillet over medium-high heat and lightly oil the surface, then place the chicken breasts in the pan and cook for 6-7 minutes per side until golden brown and cooked through (internal temperature 165°F).

Remove the chicken from the skillet and transfer to a plate, then tent loosely with foil to keep warm while preparing the salsa.

In a medium bowl, combine the diced honeydew melon, diced peach, and coarsely chopped basil leaves.

Pour the fresh lime juice over the melon and peach mixture, add the reserved lime zest, and gently toss to combine.

Taste the salsa and adjust seasoning with additional salt and pepper as needed.
