Honey Mustard Chicken

This is a quick, tasty and healthful recipe. Chicken thighs have a rich flavor but if you want to reduce the fat content, use four chicken breasts instead. Serve with a chunky tomato and red onion salad.

Pat the chicken thighs dry with paper towels and season both sides generously with salt and ground black pepper.

Heat a large skillet over medium-high heat. Once hot, place the seasoned chicken thighs skin-side down in the skillet and cook without moving them for 8-10 minutes until the skin is golden and crispy.

Flip the chicken thighs over and cook for another 5 minutes until the second side begins to brown.

In a small bowl, whisk together the wholegrain mustard and honey until well combined.

Pour the honey mustard mixture over the chicken thighs in the skillet, turning each piece to coat evenly with the sauce.

Reduce heat to medium and simmer the chicken in the honey mustard sauce for 8-10 minutes, occasionally spooning the sauce over the chicken, until it is cooked through and the internal temperature reaches 165°F (74°C).

Transfer the chicken thighs to a serving platter and spoon the remaining sauce from the skillet over the top.
