Clean and portion the hen into serving pieces, then season generously with salt on all sides.

Melt half the butter in a large heavy-bottomed pot over medium heat and brown the hen pieces on all sides until golden.

Add enough water to just cover the hen pieces, bring to a boil, then reduce heat to low and simmer covered until the hen is very tender.

Remove the hen pieces and set aside, reserving the cooking broth in the pot.

In a small bowl, whisk the flour with a ladleful of the warm broth until smooth, then stir the mixture back into the pot to lightly thicken the sauce.

Add the green peas to the sauce, season with a pinch of sugar and salt, and simmer gently until the peas are tender.

Return the hen pieces to the pot, stir in the remaining butter, and heat through over low heat.
