Pat chicken breasts dry with paper towels and cut each breast in half horizontally to create thinner, more uniform pieces for even cooking.

Pour milk into a shallow bowl and submerge chicken pieces, ensuring all surfaces are coated; let sit for 5 minutes to tenderize the meat.

Remove each chicken piece from milk, allowing excess to drip off, then dredge thoroughly in the flour mixture, coating all sides and pressing gently so coating adheres.

Heat oil for frying in a large deep skillet or Dutch oven over medium-high heat until it reaches 350°F (test with a small piece of flour—it should sizzle immediately).
