Chicken with White Wine and Garlic

Ingredients
- boneless skinless chicken breast cut into almost bite-sized pieces1 1/2 lbs
- white onion1/2 largesliced
- garlic cloves3-6 unitto taste, chopped

Method

Season the chicken pieces with salt and pepper on both sides.

Heat the olive oil and 1 tablespoon butter in a large skillet over medium-high heat until the butter foams.

Working in batches if necessary, add the chicken pieces and cook until golden brown on all sides, approximately 5-7 minutes total. Transfer the cooked chicken to a plate.

In the same skillet, add the remaining 1 tablespoon butter and the sliced white onion; sauté over medium heat until the onion softens, about 3-4 minutes.

Add the chopped garlic and dried thyme to the onion; cook for 30 seconds until fragrant.

Pour in the dry white wine, scraping up any browned bits from the bottom of the skillet with a wooden spoon; bring to a simmer.

Return the chicken to the skillet and simmer for 8-10 minutes until the chicken is cooked through and the sauce has reduced slightly.

Stir in the lemon juice and taste the sauce; adjust seasoning with additional salt and pepper as needed. Serve warm.
