Chicken Tikka
Chicken Tikka is an Indian/Pakistani dish made by baking chicken which has been marinated in spices and yoghurt. It should not be confused with Chicken Tikka Masala.

Ingredients
- (1.5 lb) skinless and boneless chicken breast diced into large cubes675 g
- tbs mustard seed oil (see Notes1 unittips and variations)

- chopped fresh red chillis (depending on strength of the Chillis and the desired strength of the marinade)1-4 unit

Method

Heat the vegetable oil in a large skillet over medium-high heat.

Pat the chicken breasts dry and place them in the hot skillet, searing for 3-4 minutes per side until golden brown.

Remove the chicken from the skillet and set aside on a clean plate.

Cut the peeled sweet potato into bite-sized cubes and the acorn squash into 4 slices as specified.

In a small bowl, combine the reserved pineapple juice, brown sugar, apple juice, and raisins, stirring until the sugar dissolves.

Return the seared chicken to the skillet and arrange the sweet potato cubes and acorn squash slices around it.

Pour the pineapple juice mixture over the chicken and vegetables, then scatter the drained pineapple slices on top.

Cover the skillet and simmer over medium heat for 25-30 minutes, until the chicken is cooked through and vegetables are tender.

Transfer the chicken and vegetables to a serving platter, then spoon the pan sauce over everything before serving.
