Heat the vegetable oil in a large skillet over medium-high heat until shimmering.

Add the cubed chicken breast to the hot oil and cook, stirring occasionally, until golden brown on all sides, about 8-10 minutes.

Drain the sliced mushrooms and add them to the skillet with the chicken.

Pour the dry white wine into the skillet and sprinkle the dried tarragon leaves over the chicken and mushrooms.

Reduce heat to medium and simmer for about 5-7 minutes, allowing the wine to reduce slightly and the flavors to meld.
