Pat the chicken breasts dry with paper towels and season generously with salt and pepper on both sides.

Heat the canola oil in a large skillet over medium-high heat until shimmering, about 2 minutes.

Working in batches to avoid crowding, place the seasoned chicken breasts in the hot oil and sear for 4-5 minutes per side until golden brown and cooked through.

Peel the bananas and cut them into thick diagonal slices, about 1 inch thick.

In the same skillet with the remaining oil, carefully add the banana slices in a single layer and fry for 2-3 minutes per side until golden and caramelized.
