Cut a hole about 2 inches in diameter from the center of each bread slice using a small glass or cookie cutter, reserving the removed bread circles for serving or discarding.

Whisk together the milk, vanilla extract, black pepper, and spices of choice in a shallow bowl until well combined.

Dip each bread slice into the milk mixture, coating both sides evenly but ensuring they remain intact and not oversaturated.

Heat olive oil in a large skillet over medium heat until shimmering.

Place the milk-soaked bread slices in the skillet and cook until the bottom is golden brown, about 2-3 minutes.

Carefully crack the egg into the hole of one bread slice, then season with black pepper and a pinch of spices if desired.
