Strawberry Peach Dessert

- -ounce can peach slices in juice1 16 unitdrained (reserve juice)

Cook the rice according to package instructions until tender, then spread it out on a baking sheet and allow it to cool completely to room temperature.

Wash and hull the strawberries, then slice them evenly. Peel and dice the peaches into bite-sized pieces and set both fruits aside.

In a large chilled mixing bowl, combine the whipping cream, confectioners sugar, and vanilla extract. Beat with an electric mixer on medium-high speed until stiff peaks form.

Gently fold the cooled rice into about half of the whipped cream mixture until evenly combined, being careful not to deflate the cream.

Spread the rice and cream base evenly into the bottom of a serving dish or cake pan to form the first layer.

Layer the sliced strawberries and diced peaches evenly over the rice cream base, reserving a few pieces of fruit for garnish.

Spread the remaining whipped cream frosting over the fruit layer, smoothing it with a spatula to create an even top.
