St. James Strawberries in Wine

Rinse the fresh strawberries under cool running water and pat dry with paper towels. Remove the green hulls by cutting them out with a paring knife at a slight angle.

Cut the strawberries in half lengthwise, keeping larger berries intact or quartering them if necessary for even sizing.

Place the prepared strawberries in a large bowl or serving dish. Sprinkle the sugar evenly over the berries.

Pour the dry white wine over the strawberries and gently fold the mixture together with a rubber spatula, being careful not to crush the fruit.

Cover the bowl and refrigerate for at least 2 hours before serving to allow the flavors to meld and the strawberries to release their juices.
