Method

Slice the banana lengthwise, then cut each half into 2-3 pieces for even cooking.

Combine the spiced rum and banana liqueur in a small heatproof bowl or measure them together for pouring.

Heat a heavy-bottomed skillet or flambé pan over medium-high heat until it is hot but not smoking.

Add the banana pieces to the hot pan and cook for 1-2 minutes until they begin to caramelize slightly on the edges.

Carefully pour the rum and banana liqueur mixture into the pan, then ignite the mixture using a long lighter or long match to create the flambé effect (optional but traditional).

Stir gently and allow the flames to subside naturally, about 1-2 minutes, until the alcohol has cooked off and the sauce thickens slightly.
