1
Combine the softened butter, creamy peanut butter, sifted powdered sugar, chopped unsalted peanuts, and vanilla extract in a large mixing bowl.
2
Mix the ingredients together until well combined and the mixture forms a thick, consistent dough-like texture.
3 minutes
3
Roll the peanut butter mixture into 1-inch balls using your hands or a small cookie scoop, placing each ball on a parchment paper-lined baking sheet.
5 minutes
4
Refrigerate the peanut butter balls for at least 10 minutes until they are firm enough to handle without losing their shape.
10 minutes
5
Melt the six 2-ounce squares of chocolate candy coating according to package directions, either in a double boiler or microwave in 30-second intervals, stirring until smooth.
5 minutes
6
Using a fork or dipping tool, submerge each peanut butter ball into the melted chocolate, coating it completely, then return it to the parchment-lined sheet.
5 minutes
7
Allow the chocolate coating to set at room temperature or place in the refrigerator for 15 minutes until the chocolate is fully hardened.
