Incredibly Rich Buttermilk Candy
Purchased from the Reinhart Estate in Ida, Oklahoma in 1992. Dated 1961. Notation on paper indicates this recipe is easy and very well received at cookouts.

Combine granulated sugar, buttermilk, white Karo syrup, and baking soda in a large heavy-bottomed saucepan over medium heat, stirring until the sugar dissolves completely.

Bring the mixture to a boil, then reduce heat to medium-low and let it simmer without stirring, allowing it to reach the soft-ball stage (240Β°F on a candy thermometer).

Remove from heat and stir in the vanilla extract and chopped pecans until well combined.

Let the mixture cool for 5 minutes, then beat vigorously with a wooden spoon or electric mixer until the candy thickens and loses its glossy appearance.

Drop spoonfuls of the mixture onto a buttered or parchment-lined baking sheet, working quickly before it hardens completely.
