Holiday Pecan Logs

Ingredients
- + ½ cup butter (no substitutes)2 teaspoonssoftened and divided

Mix together 1 teaspoon softened butter, confectioners' sugar, and dry milk powder in a large bowl until well combined.

Stir in sugar, light corn syrup, and vanilla extract until the mixture forms a stiff dough.

Shape the dough into 1-inch logs or cylinders, roughly 2 to 3 inches long, and place on parchment paper.

Place caramels and milk in a microwave-safe bowl and heat for 30-second intervals, stirring between each, until smooth and melted.

Stir the remaining 1 teaspoon softened butter into the melted caramel mixture.

Place chopped pecans in a shallow dish.

Dip each pecan log into the warm caramel mixture, coating all sides, then immediately roll in the chopped pecans until fully covered.

Place the coated logs on parchment paper and refrigerate for 15 minutes until the caramel coating is set.
