Wiggly Watermelon Parfait

- thawed Cool Whip whipped topping1 cup

- pkg. (4-serving size) Jell-O brand X-Treme watermelon flavor gelatin1 unit

- square Baker's semi-sweet baking chocolate1 unitchopped
Method

Bring a pot of water to a full rolling boil over high heat. Measure out the required amount of boiling water for your parfait molds.

Add several drops of green food coloring to the boiling water and stir thoroughly until the color is evenly distributed throughout. Adjust the number of drops to achieve your desired shade of green.

Carefully transfer the colored boiling water into a large heatproof bowl or measuring jug. Allow the water to rest briefly before the next step.

Add ice cubes to the hot green liquid in controlled quantities, stirring gently after each addition. Continue adding ice until the liquid begins to thicken and take on a gelatinous, wiggly consistency.

Once the mixture reaches a slightly viscous, trembling texture, carefully pour or ladle it into your chosen parfait glasses or molds in even layers. Work quickly before the mixture sets further.

Transfer the filled parfait glasses to the refrigerator and allow them to set completely until firm and uniformly wiggly throughout. Do not disturb the glasses during this time.
