Strawberry Almond Parfait

Ingredients
- (3.4 ounces) instant vanilla pudding mix1 package
- 2 cups
- 1/4 teaspoon
- baskets California strawberries2 pintstemmed and sliced
- 2 tablespoons
- amaretti (almond cookie) crumbs1 1/2 cups
- 1 unit
Method

Pour the nonfat milk into a medium bowl and add the instant vanilla pudding mix, whisking vigorously until smooth and thickened, about 1-2 minutes. Stir in the almond extract if using.

Place the stemmed and sliced strawberries in a separate bowl, sprinkle with sugar, and gently toss to coat. Let sit for 5 minutes to release the juices.

Divide half of the amaretti crumbs among four serving glasses or bowls, using approximately 3 tablespoons per serving.

Spoon one-third of the vanilla pudding mixture over the amaretti crumbs in each glass, dividing evenly.

Layer half of the sugared strawberries with their juices over the pudding in each glass.

Add another layer of pudding mixture to each glass, using the remaining two-thirds of the pudding divided evenly.

Top each parfait with the remaining strawberries and their juices.

Finish each parfait with the remaining amaretti crumbs and garnish with a single mint sprig. Serve immediately or refrigerate until ready to serve.
