Pineapple Snow

Sprinkle unflavored gelatin over water in a small saucepan and let sit for 1 minute to bloom.

Heat the gelatin mixture over low heat, stirring constantly, until the gelatin dissolves completely.

Remove from heat and stir in the unsweetened pineapple juice, sugar, and salt until the sugar dissolves.

Transfer the pineapple mixture to a bowl and refrigerate until it reaches the consistency of unbeaten egg whites, approximately 30-45 minutes.

Beat the 2 egg whites in a separate clean bowl until stiff peaks form.

Gently fold the beaten egg whites into the partially set pineapple mixture using a spatula until no white streaks remain.
