Sprinkle the unflavored gelatin over the cold water in a medium bowl and let it bloom for 2–3 minutes until the mixture becomes thick and spongy.

Pour the canned crushed pineapple (with its juice) into a small saucepan and warm over medium heat until steaming, about 3–4 minutes.

Pour the hot pineapple mixture over the bloomed gelatin and stir constantly for about 1 minute until the gelatin dissolves completely.

Stir in the lemon juice, cinnamon, and orange extract if using, mixing well to distribute the spices evenly.

Divide the mixture evenly among four serving dishes or glasses.

Refrigerate for at least 2 hours, or until the gelatin is set and jiggles slightly when gently shaken.
