Old Fashioned Rice Custard

Preheat the oven to 350°F (175°C).

Combine the beaten eggs, milk, sugar, vanilla extract, and salt in a large mixing bowl, whisking until the sugar dissolves and the mixture is smooth.

Fold the cooked rice and seedless golden raisins into the egg mixture until evenly distributed.

Pour the custard mixture into a buttered 1 1/2-quart baking dish, spreading it evenly.

Place the baking dish in a larger roasting pan and fill the roasting pan with hot water until it reaches halfway up the sides of the baking dish to create a water bath.

Bake for 35-40 minutes until a knife inserted near the center comes out clean and the top is lightly golden.
