Preheat oven to 350°F (175°C). Lightly butter a 9-inch baking dish or similar casserole.

Combine the cooked rice, beaten eggs, milk, sugar, salt, vanilla extract, and grated lemon peel in a large bowl, stirring until well blended.

Pour the mixture into the prepared baking dish, ensuring the rice is evenly distributed throughout.

Place the baking dish in the oven and bake for 55-60 minutes, until a knife inserted near the center comes out clean and the top is lightly golden.
