Ingredients
- A handful pf dried sorrel flowers1 unit

- 100 -150 g
Method

Rinse the dried sorrel flowers under cold water to remove any dust or debris.

Boil 4 litres of water in a large pot over high heat.

Add the rinsed sorrel flowers to the boiling water, then reduce heat to medium and allow the mixture to simmer.

Strain the infusion through a fine sieve or cheesecloth into a clean container, pressing gently on the flowers to extract all liquid, then discard the solids.

Stir in 100 to 150 g of sugar while the juice is still warm, adjusting the amount to achieve desired sweetness.

Allow the juice to cool to room temperature, then refrigerate until chilled and ready to serve.
