Place the dry tamarind in a large bowl and pour the water over it, breaking up the tamarind with a spoon to help release its pulp and flavor.

Let the tamarind soak for 10-15 minutes, stirring occasionally to ensure the pulp separates from the seeds and fibrous material.

Pour the soaked tamarind mixture through a fine-mesh strainer into another bowl, pressing the pulp against the strainer with the back of a spoon to extract all the liquid and dissolve the fruit matter.

Discard the seeds and fibrous solids remaining in the strainer, keeping the strained tamarind liquid in the bowl.

Add the sugar to the tamarind liquid and stir well until the sugar dissolves completely, about 2-3 minutes.

Stir in the lemon juice and mix until fully combined.

Pour the tamarind drink into a pitcher and allow it to cool to room temperature, then refrigerate until ready to serve.

Serve in glasses over ice, stirring the pitcher before pouring to ensure even distribution of any settled pulp.
