Sbiten
An ancient recipe Russian Hot beverage. There are several variations and also spelled sbiten A non-alchoholic version is made with blackberry jam or other flavours and water instead of the wine.

Method

Measure out 1 liter of water and bring it to a full boil in a medium saucepan over high heat.

Add 150–200g of honey to the boiling water and stir thoroughly until completely dissolved.

Add 1 teaspoon of ground ginger, 1 cinnamon stick, 1/4 teaspoon of freshly grated nutmeg, and 2 bay leaves to the honey water.

Reduce the heat to low and allow the sbiten to gently simmer, letting the spices infuse fully into the liquid.

Taste the sbiten and adjust sweetness by adding more honey if desired, stirring until fully incorporated.

Remove the saucepan from heat and strain the sbiten through a fine mesh strainer or cheesecloth into a heatproof pitcher or serving vessel to remove all solids.

Ladle or pour the hot sbiten immediately into mugs and serve piping hot, optionally garnishing with a cinnamon stick.
