Method

Pour 30 ml of lemon juice into a blender or large mixing glass.

Add 30 ml of lime juice and 30 ml of pineapple juice to the glass.

Stir the citrus and pineapple mixture thoroughly to combine the juices.

Top up the mixture with soda water until the glass is nearly full, stirring gently to incorporate the carbonation.

Place 2 scoops of vanilla ice cream into a serving glass or bowl.

Pour the chilled juice mixture over the vanilla ice cream, allowing it to melt slightly and blend with the drink.

Serve immediately while the ice cream is still partially frozen and the mixture is cold.
