Rum and Peach Mint Julep

- ripe peach1 largepeeled, pitted, quartered
- 1 unit
- 1 tsp
- light or dark rum1½ oz
Method

Gently muddle 1 fresh mint sprig with 1 tsp sugar in a cocktail shaker, pressing lightly to release the mint's essential oils without bruising the leaves.

Add the quartered peach pieces to the shaker and lightly muddle together until the peach is broken down and juices are released.

Pour 1½ oz light or dark rum and the juice of 1 lime into the shaker with the muddled mixture.

Fill the shaker with ice cubes and shake vigorously for 10-12 seconds until well-chilled.

Strain the mixture into a glass filled with fresh ice cubes, leaving the muddled fruit solids behind in the shaker.

Garnish the glass with a remaining fresh mint sprig and serve immediately.
