Fold the cooked rice gently into the batter using a spatula or wooden spoon until evenly distributed throughout.

Prepare the orange honey butter by combining butter, honey, orange juice, grated orange peel, and lemon juice in a small bowl, stirring until smooth and well blended.

Heat a griddle or large skillet over medium heat until a drop of water sizzles on the surface, then lightly butter or oil the cooking surface.

Drop small spoonfuls of batter (about 2-3 tablespoons each) onto the hot griddle to form dollar-sized pancakes, spacing them about 2 inches apart.
