Combine the cooked rice, flour, sugar, salt, and baking powder in a large mixing bowl, stirring until well incorporated.

Add the beaten egg to the rice mixture and stir until all ingredients are evenly distributed and the mixture holds together.

Heat a shallow pan or griddle over medium heat and lightly grease with oil or butter.

Spoon portions of the rice cake mixture (roughly 2-3 tablespoons each) onto the hot pan, flattening gently with the back of a spoon into patties about ½ inch thick.

Cook the rice cakes for 3-4 minutes until the bottom is golden brown and crispy.
