Peel and cut potatoes into chunks, then boil in salted water until tender, about 15 minutes.

Drain potatoes thoroughly and mash until smooth with no lumps remaining.

Dissolve yeast with warm milk and sugar in a small bowl, then let sit for 5 minutes until foamy.

Combine mashed potatoes, flour, salt, and the yeast mixture in a large bowl, stirring until a thick batter forms.

Heat oil or lard in a large skillet or griddle over medium-high heat until shimmering.

Drop spoonfuls of batter onto the hot surface, flattening slightly with the back of the spoon to form small oval pancakes.

Fry each blini for 2-3 minutes per side until golden brown and crispy on the edges.
