Okonomiyaki
Okonomiyaki is a popular dish in Japan. It consists of a batter made of flour, eggs, cabbage and green onions and other ingredients of your choice. The name means "as you like it" or "what you want" in Japanese.

Ingredients
- all-purpose flour (or yam flour if you can get it)1 cup
- water (or stock)1 cup

- cabbage3/4 cupfinely sliced into strips (2" long by 1/4" wide)
- green onions2-3 unitchopped into 1/4" rounds (use white part and freshest bit of green part)
- mozzarella cheese (optional; other cheese may be substituted)1/4 cup
- slices of chicken10 smallbacon or beef (your choice)
- okonomiyaki sauce (sold at Japanese markets)1 unit
- dried bonito flakes1 unit
- powdered nori (seaweed)1 unit

Finely shred approximately 2 cups of cabbage and thinly slice 3-4 green onions, keeping the green tops separate from the white parts for garnishing later.

In a large mixing bowl, combine 1 cup of wheat flour, 2 eggs, and 1/2 cup of water or dashi stock, whisking until a smooth batter forms.

Fold the shredded cabbage and the white parts of the green onions into the batter, mixing until the vegetables are evenly coated and distributed throughout.

Heat a large non-stick skillet or griddle over medium heat and lightly grease it with oil or butter.

Pour the batter mixture onto the skillet, shaping it into a round pancake approximately 1 inch thick and 8 inches in diameter.

Cook the okonomiyaki on the first side until the bottom is golden brown and the edges appear set, then carefully flip it using a wide spatula.

Cook the second side until fully golden brown and the center is cooked through, pressing down gently with the spatula as needed.

Transfer to a plate and garnish with the reserved green onion tops, along with okonomiyaki sauce and Japanese mayonnaise if desired, and serve immediately.
