Grind the flaxseeds in a food processor or blender until they reach a coarse flour consistency, then set aside.

Whisk together the all-purpose flour, soy flour, ground flaxseeds, baking powder, and baking soda in a large bowl.

In a separate bowl, whisk together the yogurt, soy milk, honey, vegetable oil, and egg yolk until well combined.

In another clean bowl, beat the egg whites with an electric mixer until stiff peaks form, approximately 2–3 minutes.

Fold the wet ingredients into the dry ingredients until just combined, then gently fold in the beaten egg whites in two additions to maintain volume.

Preheat the waffle iron and lightly oil or spray it with cooking spray.

Pour batter into the preheated waffle iron and cook according to manufacturer's instructions until golden and crispy, approximately 4–5 minutes per waffle.

While waffles cook, peel the bananas and slice them on the bias into 1/4-inch thick pieces.

Heat a large skillet over medium-high heat, then add the banana slices and sugar, stirring gently until the sugar melts and the bananas begin to caramelize, approximately 3–4 minutes.
