Ingredients

Method

Heat the white wine in a saucepan over medium heat until it begins to steam, then add butter and stir until melted.

Remove the wine mixture from heat and let cool slightly, about 2-3 minutes, until warm but not hot to the touch.

Crack the eggs into a large mixing bowl and beat with a whisk or electric mixer until well combined.

Gradually add the flour to the egg mixture, stirring constantly to form a medium stiff dough without lumps.

Stir the cooled wine and butter mixture into the dough until fully incorporated, then add the sugar and mix well.

Transfer the dough to a piping bag fitted with a large round tip for shaping.

Heat oil in a deep frying pan or fryer to 350°F (175°C), checking the temperature with a thermometer.

Pipe the dough directly into the hot oil in 3-4 inch lengths, working in batches to avoid crowding the pan.

Fry each doughnut for 1-2 minutes per side until golden brown, then transfer to a paper towel-lined plate with a slotted spoon.
