Preheat oven to 350°F (175°C). In a large mixing bowl, cream together the shortening and sugar until light and fluffy, about 2-3 minutes.

Beat in the egg until fully incorporated, then add the molasses and mix until the batter is smooth and well combined.

In a separate bowl, whisk together the 4½ cups of flour, 3 tbsp of flour, baking soda, and ginger.

Alternate adding the dry ingredients and sour milk to the wet ingredients, beginning and ending with the dry mixture. Mix until just combined after each addition.

Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.

Bake for 10-12 minutes until the cookies are set but still soft, and the tops have cracked slightly.

Allow cookies to cool on the baking sheet for 2-3 minutes, then transfer to a wire rack to cool completely.
