Combine the 2 egg yolks, 1 whole egg, and 1 teaspoon confectioner's sugar in a mixing bowl and beat until light and pale, approximately 2–3 minutes.

Add the vanilla and salt to the egg mixture and stir to combine thoroughly.

Gradually fold in the flour until the batter is smooth and well incorporated, being careful not to overmix.

Heat oil or fat in a large skillet or frying pan over medium-high heat until shimmering and hot.

Transfer the batter to a piping bag with a thin nozzle or squeeze bottle for easier handling.

Carefully pipe thin, delicate strands or loops of batter into the hot oil, working in small batches to avoid overcrowding the pan.

Cook until the pastry strands turn golden brown on all sides, gently turning them with a fork or tongs as needed.

Remove the cooked pastry from the oil using a slotted spoon and drain on paper towels.
