Method

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

Combine the rolled oats, sugar, and salt in a large mixing bowl, stirring until evenly distributed.

Crack the egg into a small bowl and whisk well, then add the vanilla extract and stir to combine.

Pour the melted butter into the egg mixture and whisk until fully incorporated and smooth.

Add the wet ingredients to the dry oat mixture and fold together with a spatula until the oats are evenly coated and the dough comes together.

Drop spoonfuls of the oat mixture onto the prepared baking sheet, spacing them about 2 inches apart, and gently flatten each mound into a round shape with the back of the spoon.

Bake in the preheated oven for 10-12 minutes until the edges are golden brown and the centers are set.

Remove from the oven and allow the fancies to cool on the baking sheet for 2-3 minutes before transferring to a wire rack to cool completely.
