Preheat oven to 350°F (175°C).

Cream together softened margarine or butter and sugar in a large bowl until light and fluffy, about 2-3 minutes.

Add ricotta cheese and vanilla extract to the creamed mixture, stirring until well combined.

Beat in the eggs one at a time, mixing well after each addition.

In a separate bowl, whisk together all-purpose flour, baking powder, and salt.

Gradually fold the dry ingredients into the wet ingredients until just combined; do not overmix.

Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.

Bake for 12-15 minutes until the cookies are set and lightly golden around the edges.
