Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a large mixing bowl, cream together the butter or margarine and sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.

Gradually sift in the flour and salt, stirring gently until the dough comes together into a soft, slightly crumbly consistency. Do not overmix.

Fold in the finely chopped pecans until evenly distributed throughout the dough.

Roll the dough into small balls, approximately 1 inch in diameter, and place them about 1 inch apart on the prepared baking sheet.

Bake in the preheated oven until the cookies are set and just barely golden on the bottom, being careful not to overbrown them.

Remove the polvorones from the oven and allow them to cool for 5 minutes on the baking sheet before handling, as they will be very fragile while warm.
