Preheat your oven to 350°F (175°C) and lightly grease two baking sheets or line them with parchment paper.

In a large mixing bowl, cream together the shortening, brown sugar, and white sugar until light and fluffy. Beat in the eggs and vanilla extract until well combined.

Dissolve the baking soda in the water, then stir the mixture into the creamed sugar and shortening.

In a separate bowl, whisk together the flour, cinnamon, and salt, then gradually add the dry ingredients to the wet mixture, stirring until just combined.

Fold in the rolled oats, raisins, and walnuts until evenly distributed throughout the dough.

Drop rounded tablespoons of dough onto the prepared baking sheets, spacing the cookies about 2 inches apart.
