In a large mixing bowl, combine flour, bicarbonate, salt, and sugar, then create a well in the center of the dry mixture.

Crack eggs into the well and pour in milk, then begin mixing with a fork, gradually incorporating the dry ingredients from the sides until a shaggy dough forms.

Add grated lemon rind to the dough and knead by hand for 3-4 minutes until the dough becomes smooth and elastic, adding a touch more milk if too dry.

Melt butter in a large skillet or griddle over medium heat until foaming, then swirl to coat the cooking surface evenly.

Tear off pieces of dough about the size of a walnut and flatten slightly, then carefully place them into the hot buttered skillet in batches without crowding.

Cook for 2-3 minutes on the first side until golden brown, then flip carefully and cook the other side for another 2-3 minutes until light golden.

Transfer the cooked pieces to a warm plate and continue with remaining dough batches, adding more butter to the skillet as needed.
