Preheat the oven to 400°F and lightly grease or line a muffin tin with 12 cups.

Combine flour, baking powder, sugar, and salt in a large mixing bowl, stirring together until evenly distributed.

Whisk together the slightly beaten egg, milk, and melted shortening in a separate bowl until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix, as some lumps should remain in the batter.

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Bake in the preheated 400°F oven for 20 minutes, until a toothpick inserted into the center of a muffin comes out clean.
