Paradise Banana Bread

Ingredients
- + 2 tbsp Bisquick reduced fat baking mix1 cup
- 6 tbsp
- pourable Splenda½ cup
- chopped macadamia or walnuts¼ cup
- ⅔ cup
- (1 - 8oz can) crushed pineapple1 cuppacked in fruit juice, drained

Preheat oven to 350°F and lightly grease a loaf pan or spray with cooking spray.

Combine 1 cup Bisquick reduced fat baking mix, 6 tbsp graham cracker crumbs, ¼ cup chopped macadamia or walnuts, and ½ cup pourable Splenda in a large mixing bowl.

In a separate bowl, whisk together ⅔ cup mashed bananas, 1 cup drained crushed pineapple, 2 tbsp no-fat sour cream, and 1 tsp rum extract until well combined.

Fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix the batter.

Pour batter into the prepared loaf pan and smooth the top with a spatula.

Bake in the preheated 350°F oven for 35 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
