Ingredients

  • stirred Bulgarian yoghurt
    500 ml
  • honey / syrup
    3 tbsp
  • 1 tsp
  • heaped tsp bi-carb
    1 unit
  • 2 cups
  • crushed wheat
    cups
  • make up ½ cup of linseed
    wholewheat kernels, bran
    1 unit

Method

Preheat the oven to 180°C (350°F) and lightly grease a loaf tin or round baking pan.

Combine the stirred Bulgarian yoghurt, honey, and salt in a large mixing bowl, stirring until well blended.

In a separate bowl, mix together the whole wheat flour, crushed wheat, linseed, wholewheat kernels, and bran until evenly distributed.

Add the bi-carb to the dry ingredients and stir thoroughly to ensure it is fully incorporated and distributed throughout the mixture.

Fold the dry ingredients into the yoghurt mixture using a spatula or wooden spoon, stirring gently until just combined—the batter should be thick and slightly lumpy.

Transfer the batter to the prepared baking pan, smoothing the top with a spatula to ensure even baking.

Bake in the preheated oven for 35 minutes until the top is golden brown and a skewer inserted into the centre comes out clean or with just a few moist crumbs.

Remove the bread from the oven and allow it to cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.

Slice and serve warm or at room temperature, plain or with butter and preserves if desired.
